If you’re going to make a rainbow cake you may as go all the way – the brighter the better! This was one of the ‘rainbow’ element of my niece’s ‘Princess-Rainbow-Mermaid-Unicorn-Fairy’ party. We have loads of lovely teachers, neighbours and special friends to thank in our lives so this year the kiddies got busy and did it all themselves! We made a huge batch of Christmas Tree and Gingerbread Men cookies then decorated them with red, green and white Hundreds&Thousands; sugar pearls for Christmas baubles on the trees and jumbo hearts for cute little gingerbread men buttons. How could I not love birthdays with fabulous friends that secretly whip together surprise celebrations like this?!
