Recipe: Eton Mess… in a jar!

This is such a fab dessert to whip together in a hurry...even the kids can do it!

There are so many versions of this dessert (so no telling me off if this isn't the 'proper' way!) Here is my super fast cheats version...

You'll need
- meringues (you guessed it, mine are store bought)
- cream
- caster sugar
- vanilla ice cream, slightly melted
- Dollop Raspberry & Boysenberry Compote
- fresh or freeze dried berries
- mint

Whip the cream with a spinkling of caster sugar till soft peaks form. Break your meringues into chunks then layer your meringues, flavoured cream, ice cream and compote in the jar. Top with fresh berries and a spring of mint. Done!
