Recipe: White Chocolate Cake

This is my go-to cake. I would've thought everyone I know would have had enough of it by now or wonder if I know how to bake anything else, but it is still my most requested cake. The hubby gets mad this one hardly ever gets leveled - no left overs for him! (the top bit is sugary goodness that I can't bare to level off)

It's an easy cake to put together, and you don't need a mixer so perfect for a summer celebration at the batch. It's just an adaption of a few old recipes put together which I normally team with fluffy frosting which is a bit like marshmallow icing.....delish!

250g butter
150g white chocolate (I use Whittakers)
2 cups caster sugar
1 cup full milk
1 1/2 cups plain flour
1/2 cup self raising flour
1 tsp vanilla extract
2 large eggs

Preheat oven to 160c. Grease and line a 20cm cake tin, including the sides.

Heat butter, chocolate, sugar and milk in a medium saucepan and stir over a low heat till smooth. Transfer into a large bowl and cool slightly.

Lightly whisk eggs and vanilla in a small bowl. Sift flours together then add flours and egg mix to your slightly cooled chocolate mix.

Pour mixture into your cake tin. Bake for 45 min uncovered then 45 min loosely covered with foil. Leave in the tin for 10 mins before turning onto cooling rack.

It's a tricky cake to know when it's done as often the center is still quite gooey - but don't be be scared, that's the best bit!

Ice with white chocolate ganache, butter cream or fluffy frosting!
