Recipe: Sugar Cookies

This is the simplest cookie dough to make and seems to hold its shape really well for decorated cookies.

175g unsalted butter, softened
200g caster sugar
1 1/2 tsp vanilla extract
375g plain flour, sifted
1 egg
1 egg yolk

Beat butter, sugar and vanilla extract together with an electric beater till pale and fluffy. Add the sifted flour, egg and yolk and mix till you have a smooth dough.

Turn dough out onto a baking sheet lined with baking paper. Form into a flat rectangle then cover with another sheet of baking paper (this prevents any sticking and makes clean up a breeze!). Roll your dough out to about 5 mm thick then refrigerate for 20 mins.

Preheat oven to 175 fan bake.

Remove top sheet of baking paper and cut your cookie shapes out using a cookie cutter. Place onto another lined sheet ready for the oven.

Bake for 10 - 12 mins then cook on wire racks.

Your cookies will keep for up to a week in an air tight container.
