The Dad in this house has always said that anything could be improved by adding bacon so voila cupcakes AND bacon. If you love your sweet mixed with your savoury (I'm a sucker for fries and ice-cream!) then this is the recipe for you. It's more reminiscent of pancakes, bacon and maple syrup so don't be scared, give it a go!
80g softened unsalted butter
280g soft brown sugar
240g plain flour
1tbs baking powder
1/4 tsp salt
2 large eggs
140g plain yoghurt
120g maple syrup
Pre-heat oven to 160-170 degrees (fan-bake). Line cupcake tin with your favourite Pretty Baker cases.
Whisk all your dry ingredients in a large bowl or electric stand mixer. Slowly add butter and mix on low till it resembles breadcrumbs.
In a separate bowl whisk together the eggs, yoghurt and syrup.
Slowly add half this mixture to your dry ingredients and mix on low till just combined. Scrape down the sides of you bowl and repeat till all the ingredients are just combined.
Fill your cases approx 2/3 fill and bake for 20-25mins or until a skewer inserted into the cake comes out clean.
Let the cakes cool in the tray for approx ten mins before transferring to a wire rack.
150g cream cheese, softened
150g unsalted butter, softened
3 cups of sifted icing sugar
3 tbsp of maple syrup
Blend very soft butter and cream cheese together till smooth. Slowly add sifted icing sugar and maple syrup till combined. Turn mixer up to medium speed and whip for three minutes till your icing is smooth, fluffy and much lighter in colour.
Fill your Ice It Pretty! Icing Kit and pipe generously onto your cupcakes and top with a shard of maple bacon.

Brush bacon with maple syrup and grill in the oven till crispy. Use a sharp knife to cut your bacon into shards.
