Recipe: Apple Cinnamon Mini Cakes

The combination of apple and cinnamon is a winner for me.  It's a delicious treat at Christmas for those not so keen on fruit cake like me!  Cinnamon flavoured oil packs a good punch so you only need a drop or two.  It also leaves your icing beautifully white.
80g softened butter
260g caster sugar
240g plain flour
2 tsp ground cinnamon
1tbsp baking powder
1/4 tsp salt
240mls milk
1tsp vanilla extract
2 large free range eggs
1 1/2 cups grated apple
Preheat oven to 170c degrees and line a muffin tin with kraft cases.
Sift all your dry ingredients into a bowl.  Add butter and beat until you have a breadcrumb like mixture.  In a separate bowl whisk milk, eggs and vanilla together.
Slowly add the wet ingredients to the dry mix, scraping down the sides of the bowl as you go.  When just combined fold in the grated apple.
Fill your cases approx two thirds of the way and bake for approx 15mins for mini cases, 20mins for mid size cases or 25 for regular size cases.  Test with a skewer to be sure, if it comes out clean you are good to go.
Leave in the tin for 10mins then turn onto a cooling rack to cool completely.
175g cream cheese softened
175g unsalted butter softened
1tsp vanilla extract
1-2 drops of cinnamon oil
4 cups sifted icing sugar
Beat the softened butter and cream cheese till smooth.  Add vanilla and beat.  Slowly add sifted icing sugar while still beating.  Scrape down the sides and beat on medium speed for approx 3mins till icing is smooth and pale.  Add cinnamon oil to taste and beat till combined.
Choose your favourite icing tip from the Ice it Pretty! Icing Kit and decorate!
For apple chip toppers dehydrate thinly sliced apples in a 50c degree oven for approx 3-4 hours or adorn with a cute apple topper in a flash!
