Recipe: Date Loaf

This is a great one for little baked gifts topped with lemon cream cheese icing, left plain for school lunch boxes or toasted and spread with butter.

1 cup of chopped pitted dates
1 cup boiling water
1 tsp baking soda
juice and zest of an orange
125g  softened butter
1 cup soft brown sugar
1 tsp vanilla extract
1 egg + 1 egg yolk
2 cups self raising flour
1 tsp cinnamon
1 tsp ground ginger

Preheat oven to fan bake 170 degrees

Place pitted dates, baking soda, orange juice and boiling water in a bowl and set aside.

Sift flour, cinnamon, and ginger in a separate bowl and set aside.

Beat sugar, butter and vanilla till smooth, fluffy and light in colour.  Add the egg and beat well till combined followed by the egg yolk.

Slowly fold the sifted dry mix and wet date mix alternately into the batter till just combined.

Divide batter into three loaf cases and bake for approx 35mins or until a skewer comes out clean.
