These chewy chocolate cookie are the perfect sandwich cookie; thin but chewy and perfectly chocolatey. Miss 11 made these and opted for a milk chocolate base with dark chocolate chunks but you could easily have this the other way round for a darker choc bikkie which balances perfectly with creamy vanilla ice cream. We also sneaked in a little salted caramel sauce....if you're going to do it, do it well I say!
175g milk chocolate 2 free range eggs
50g unsalted butter 250g caster sugar
50g plain flour 1tsp vanilla extract
1/4 tsp baking powder 115g dark choc, chopped
pinch of salt
Pre-heat oven to 180 degrees and line two baking sheets with baking paper.
Melt the milk chocolate and butter then set aside to cool slightly. Sift the flour, baking powder and salt together. In another bowl beat eggs, sugar and vanilla extract until thick and pale. Stir the melted chocolate into the egg and sugar mixture along with the dark choc chunks.
Place spoonfuls of the batter onto your lined baking sheets and bake for approx 8 minutes. Let cool for a few minutes then transfer to a wire rack.
Let your ice cream sit out on the bench a few moments to soften. Add a drizzle of salted caramel or berry coulis to your cookie followed by a generous scoop of vanilla ice cream, I can't go pass the creamy deliciousness of Lewis Road Creamery, then sandwich together with a second cookie.
