Recipe: Lemon Cream Cheese Icing

Honestly this is....Lemon Delicious!
There's probably things that it 'should' be paired with like Raspberry, Lemon & White Chocolate Layer Cake or lemon cupcakes but in reality I could eat this out of the jar.  It's smooth, versatile and addictive.
This would be enough for the layer cake.  If you're icing cupcakes you might want to half the recipe.  or not.
175g softened unsalted butter
175g softened cream cheese
4.5 cups sifted icing sugar
1/2tsp vanilla extract
juice of a lemon
Blend softened butter and cream cheese together, add half the icing sugar and beat till smooth.
Add vanilla and lemon juice followed by slowing adding the remaining icing sugar.
Scrape down the sides then beat till smooth and paler in colour, approx three minutes.
Lick the bowl.  Please lick the bowl.
