This little number is just peachy. Serve warm with greek yoghurt.
6 peaches cut into 2cm pieces
Juice of 1/2 orange
1/4 tsp ground ginger
1/2 tsp ground cinnamon
1/4 cup brown sugar
To make the filling combine peaches, orange juice, sugar, cinnamon, ginger, a split vanilla pod and flour into a medium saucepan on a low heat. Partially cover and let simmer for approx 10-15mins. If you feel it needs a little more sauce add extra orange juice and stir. Set aside to cool a little.
Pre heat oven to 180c and brush a 20cm loose bottom tart tin with butter. Lay your filo on a clean bench and brush with melted butter and place in your tart tin with the edges overhanging. Repeat this process till you have five layers of filo forming the bottom of your pie. Fill the tart with your peach filling, scrunch the over hanging filo toward the centre and top with three more layers of filo.
Bake for 25-30mins or till golden. Serve warm dusted with icing sugar with a dollop of greek yogurt.
