Recipe: Pesto Twists

Posted by Lisa Courtney on

This is super quick to throw together and is a lunch box hit!
2 1/2 cups plain flour, sifted
2 teaspoons baking powder, sifted
1 teaspoon of sea salt flakes
1 cup buttermilk*
150g pesto
Preheat oven to 190c degrees. Place sifted flour and baking powder in a large bowl and whisk through sea salt flakes.  Add buttermilk and bring together with a knife. Turn out onto a floured surface and kneed till smooth.
Roll out your dough to a 30cm square on a well floured board and spread generously with pesto.  We often make our own but store bought is a great too.
Gently roll the dough to form a log with the seam underneath.
Cut down the centre of the log leaving a little joined at the top then twist the two sides around each other.
Turn and cut the joined end in half to complete the twist.
Bake for 25-30mins till golden.
You can easily swap out pesto for any other lunch time favourites like Marmite and cheese or tomato paste, oregano & cheese.
*to make buttermilk simply add 1 tablespoon of table vinegar to 1 cup of room temperature milk and set aside for five mins.
