The combination of apple and cinnamon is a winner for me.  It's a delicious treat at Christmas for those not so keen on fruit cake like me!  Cinnamon flavoured oil packs a good punch so you only need a drop or two.  It also leaves your icing beautifully white.

Recipe: Pina Colada Cake

Pair with ridiculous dancing round the kitchen singing "Do you like Pina Colada's and dancing in the rain" and of course a Pina Colada.
This recipe will give you a nice height for a celebration cake.  You could easily half the batter for one 8" cake if you prefer.  The icing is amazing.  I am considering it as a sandwich option at this point.
